Big news: this passed Friday I completed my bachelors degree! It seemed like this day was so distant for so long, and now it's come and gone. I'm so relieved, proud, and excited. To celebrate, Michael and I booked a trip to Catskill, NY. This is also our second year treating each other to a weekend together, both as a Christmas gift and anniversary celebration, and this year, my graduation celebration!
We stayed at a tiny house resort called Think Big! A Tiny House Resort. The host was amazing and the house was so adorable. There was nothing better than cozying up together among the snowy mountains and exploring the little towns.
Friday night, we arrived around 7 and settled into our home. We headed out for dinner at this cute little vegan cafe in Woodstock. It was snowing and the lightly lit downtown was such a dream. The food was amazing and it was the perfect start to our trip. We headed back after dinner and spent the rest of the night enjoying just being together.
We took is slow Saturday, exploring the grounds of the resort in the morning. We headed into the downtown of Catskill, and we spent the entire day popping in and out of the quaint little shops. It almost felt surreal to be in a small town where everyone knew each other and suggested one another's shops coming from the magnitude of NYC. It was just the breath of fresh air we were seeking. We ended up getting a bunch of amazing things from the antique and mercantile shops and snow began to fall just as we were leaving.
Sunday we headed out early for breakfast at Gracie's Luncheonette in Leeds, NY. It was honestly one of the best breakfast's we've ever had....like ever. After we explored the mountains with some hiking and driving around the scenic routes before heading home.
The whole weekend was just a winter dream and now I'm feeling all sad that it's over! It's funny how we plan for things that excite us, and then they arrive and fly by so fast. Before you know it, they're just memories of the past. Maybe that's a beautiful thing.
